This is a Martha Stewart-inspired staple. I like it because it gels without the use of gelatin. The pectin in the apple is enough to make it set

Makes one 4-cup mold

  • 6 wide strips orange jest
  • 1/4 cup orange juice
  • 3/4 pounds fresh cranberries
  • 1 tart apple, peeled and cut into 1/2" pieces
  • 1 1/4 cup sugar
  • Pinch of salt
  1. lightly coat a 4 cup mold with cooking spray
  2. in a medium saucepan, bring ingredients to a rapid simmer over medium heat. cook, stirring occasionally, until berries burst and mixture thickens to a jam consistency, about 10 minutes.
  3. transfer to a blender and blend until smooth. strain mixture through a fine sieve, stirring and pressing on solids. transfer mixture to your greased mold and smooth over the top. wrap with plastic wrap and refrigerate for at least 2 hours. Unmold before serving.
